'Sunsets, Saddles & Shiraz' is a new, authentic Australian Outback experience, combining the rustic romance of cattle droving, gourmet food and wine, native wildlife and the breath‐taking Flinders Ranges (one of the most ancient, remarkable landscapes on earth). And it's all just a few hours drive north of Adelaide, the cultural capital of South Australia.

Day 1 - Arrive Prairie Hotel

You'll arrive at the Prairie Hotel on the first afternoon. The award‐winning Prairie Hotel is your Outback oasis. Licensed in 1876, it's one of few buildings in Parachilna: population seven and lying between the Flinders Ranges and Lake Torrens. Today it's owned by Jane and Ross Fargher, who have built a national reputation for exceptional hospitality and cuisine. The restaurant speciality is 'feral food', everything from kangaroo, emu and camel to native limes and bush tomatoes.

Tonight, (desert skies willing) you'll dine under a canopy of stars, with a menu inspired by renowned Australian chef Andrew Fielke. Outback singer/songwriter John O'Dea, the hotel's resident musician, will also be on hand each night to entertain you with his unique brand of Australian heritage music.

Day 2 - 3 - Cattle droving

Nilpena is a working cattle station, north‐west of Parachilna on the edge of Lake Torrens. It's here that you'll meet the drovers and be matched with your horse. You'll love the place: it's right on the edge of red sand dunes which sweep far away to the north; and to the east you'll get panoramic views of the Flinders Ranges.

Over the next two days, expert drovers will match you to your mount, and before long you'll be ambling along on horseback - hearing about life as a drover, feeling the sun on your back, seeing magnificent desert landscapes (from gibber plains to sandy creek beds lined with majestic river red gums), and smelling the desert at dusk.

You'll learn to identify various animal tracks and native plants. You'll enjoy a fresh packed lunch and billy tea in a shady creek bed. And you'll tail the cattle until late in the afternoon, with the sinking sun guiding you into the station yards for the night.

After your day in the saddle, you'll freshen up in the Nilpena Shearer's Quarters before enjoying sunset drinks around the campfire.

For one amazing evening, you'll dine with the drovers in the historic Nilpena Woolshed (on a 'slate floor' that's 550 million years old!).

Day 4 - Depart Prairie Hotel

Sadly your 'Sunsets, Saddles & Shirz' experience has come to an end.
